about the coffee

El Rubi is a farm located in San Adolfo, Huila, Colombia. The farm is owned and operated by Wilder Lazo, who is well known for his experimental anaerobic processing methods for both washed and natural coffees.

This offering is a natural, anaerobic processed coffee consisting of 100% Chiroso varietal. Chiroso is a varietal recently discovered in Colombia, thought to be a mutation of the Caturra varietal. After further research, Chiroso was deemed a varietal from Ethiopia which makes sense given its floral and tea-like notes.

This coffee is heavily fruit forward, with a very sweet finish. Tasting notes include berries, citrus, red wine and dried fruits.

This coffee makes a tremendously memorable pour over. Best served in a V60 or flat bottom brewer.
